Saint Nicholas Cake
What You Need
- 2 1/4 cups flour
- 1 3/4 cups sugar
- 2 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon vanilla
- 1 teaspoon amend
- 1 teaspoon rum flavoring
- 1 cup shortening
- 4 eggs
- 2 cups mixed fruit, cherries and nuts, (your choice)
- 3/4 cup milk
MIX flour, sugar, salt and baking powder in a large bowl.
ADD milk, shortening, eggs and flavoring.
BEAT 4 minutes.
STIR in fruit and nuts until blended.
POUR into tube pan which has been greased and floured.
BAKE at 340 for 60-70 minutes or until done.
ICE and decorate with cherries.
This cake is the closets thing to a fruit-cake and only half the work. It tastes better if you let it sit for a couple days in a refrigerator. It freezes well too!
